Why Jello Recipes?

One of the things we are asked quite often here at JelloRecipes.net is why we chose to do a recipe site about Jell-O ®. Well actually, it came about in a weird way. Shortly after my oldest son was born, I got into an accident and, in checking out injuries from that, they discovered I had MS.

I can only spend a limited amount of time on my feet, and discovering that meant that I either had to start searching for new ways to do things or give up parts of my life. I have always been a fighter and giving up is just not in my nature. I'm stubborn in that way (too stubborn, my husband says sometimes!) So giving in, and making me or my family have to do without, just wasn't going to cut it.

In due course, despite being told I would probably never have children, I gave birth to my second son. It was three months after that that my husband suffered two grand mal seizures and was laid up for quite a few months before he could help out around the house much.

Well, what was I going to do - give up? No, not me, I just don't know the word. Fast forward a bit - my husband recovered, only to have more health setbacks and now there were the twins. Yes, we now have four boys and I wasn't even supposed to be able to have the one!

As you can imagine, with this much testosterone in the house, food is very important. Also, they all have a glycemic issue. So, you see, good food and having it around are essential. So what I decided to do was find ways to make healthy and fun snacks and desserts, to keep the wonderful men in my life happy and healthy.

And Jell-O ® came to the rescue! With this wonderful line of products, I found the answer for both my limitations and the answer for my guys. What more can a busy working mother ask for than to find something that is quick, simple, and nutritious for the special guys in her life?

I had been considering starting my own website as a way to make a little extra to help out around the house, and that's when a friend said, "you're always coming up with such fun and delicious desserts - why don't you create a dessert site?" I thought about her suggestion, talked to the family and they agreed, giving me plenty of encouragement and support along the way.

The boys helped out around the house and freed up some time for me to start the project. I knew that there were already lots of recipe websites on the internet, but I wanted to do something a little different - something for the working mother who has no real free time, like me. So I looked at the desserts I made around the house and they all seemed to have a common theme. Jell-O ® was used in many of them.

So, I decided to make this my theme and here we are two years later. Jello Recipes has done wonderfully and we are about to do a major site expansion to cover even more desserts, and offer even more information, facts and handy tips.

You know, life is funny - when it hands you a lemon, you can either give up or make lemonade. Or in my case, lemon Jello.
