What is Jello Made Of?

 

There are hundreds of different desserts featuring jello, ranging from basic gelatin squares to jello puddings with whipped toppings. There are four ingredients in basic jello, which are gelatin, water, food coloring and sugar or an artificial sweetener.

What is Gelatin?

Gelatin is the key ingredient in jello and the one that lets it be transformed into different shapes. Gelatin is a processed version of collagen which is a protein found in different animals and humans. Collagen makes up a third of all the protein in our body and is a fibrous molecule that makes bones, skin, and tendons elastic and strong.

How Gelatin Becomes Jello

The gelatin found in jello desserts comes from the collagen in pig or cow bones, connective tissue, and hooves, making it unsuitable for vegetarians or vegans. Manufacturers grind up these animal parts and break down the cellular structures with a strong acid to release the collagen. The resulting mixture is boiled and the collagen breaks down into gelatin, which can be extracted easily because it floats on top of the boiling mixture. Food coloring, sugar, and water are added to the gelatin to result in jello.

What is Jello Made From

Many people ask what is jello made of and might be put off when they find out it is made from animal parts. However, these are the same people who are happy tucking into a fillet steak or a bacon sandwich, so the fact that gelatin is animal-based does not really matter unless you are a strict vegetarian.

What does matter is that jello is a delicious dessert, which is versatile, can be made in hundreds of different flavors and appeals to kids and adults alike.

The Uses of Gelatin and Gelatin Substitutes

 

Gelatin is used to make different kinds of jellied dishes. So, what is gelatin made of exactly and where does gelatin come from? Gelatin ingredients come from beef or pork and some chefs like to boil pig trotters or bones to make their own. Gelatin powder is widely available too. Gelatin is then added to boiling water to make jello recipes. Gelatin is completely natural and is high in nutrients, providing a lot of essential amino acids.

Gelatin as an Ingredient

Gelatin can work as a binding agent, a gel, a whipping agent, a thickener, a stabilizer, an adhesive, and an emulsifier. Gelatin confection are made from sugar, water and corn syrup with color, flavor and texture modifiers added. Gelatin is a favorite ingredient in confectionery because it foams, solidifies, or gels into a shape, which dissolves in the mouth, gently releasing wonderful flavors.

Gelatin is used in a lot of dairy products, including ice cream and yogurt. It helps to limit ice crystal formation in ice cream and avoid a starchy, floury texture in yogurt. Gelatin melts at body temperature, making both yogurt and ice cream creamy and smooth to eat.

Gelatin is sometimes used in the manufacture of juices, wine, and beer because it is a coagulant and can remove impurities. It is also used in meat products, such as in gel aspics, canned and glazed meats. It is used because it can absorb meat juices and give structure to a meat product that would otherwise fall apart.

Gelatin is also used in pharmaceutical products and in photographical supplies, such as to make the bonding on celluloid film.

Vegetarian Gelatin

A vegetarian or vegan can use arrowroot, rice starch, or potato starch instead of gelatin. You can cover a vegetable or fruit flan in a jelly-like glaze by blending one of these ingredients with water, then adding it to boiling water. You will have to stir the vegetarian gelatin mixture well to prevent lumps. If you do end up with lumps, you can use a food processor to get rid of them. This type of organic gelatin is also kosher gelatin and works well in certain dishes.

Agar-Agar Uses and Recipes

If you want to make a jello mold recipe, however, you cannot use these vegetarian gelatin ingredients. Instead, you can use agar-agar, which is a seaweed-based powder that you add to boiling water. You can get agar-agar in different flavors.

Agar-agar desserts should be eaten the same day as they are made because they offer bacteria a good environment in which to multiply. You can keep agar-agar in powder form for months though. Does gelatin go bad? The answer to that is rarely - gelatin has an almost indefinite shelf life if you store it well.

Agar-agar desserts set quicker than gelatin desserts so making these at the last minute will not be a problem. Agar-agar makes a slightly firmer, less wobbly jello than traditional jello mixtures but the taste is similar.

You might want to keep some agar-agar in case you have vegetarians visiting. It is easier to use than gelatin too, since gelatin goes stringy if you use water, which is too hot. Agar-agar is virtually foolproof.

 
 

The History of Knox Gelatin

 

Rose Knox and her husband Charles Knox invested their $5,000 savings into a prepared gelatin business in Johnstown, where the local tanneries would keep them in gelatin ingredients. Rose Knox worked hard to evolve gelatin from a delicacy and food for invalids into a popular household dessert favorite.

Charles Knox died in 1908 and Rose Knox controlled the business. A recipe book and newspaper recipe column helped to promote Knox gelatin, a bigger plant was opened in 1911 and by 1925, and the company was capitalized at a million dollars.

How is Knox Gelatin Used?

A new Knox gelatin plant was built in 1936 and the Knox Company was the leading gelatin manufacturer, selling sixty percent of its gelatin to food companies, consumers, and the other forty percent for medical and industrial use, especially in the photographic industry.

Rose Knox was the first female member of the American Grocery Manufacturers' Association and she became its first female director in 1929. She retired from Knox in 1947 and her son James became the chairman.

Knox Gelatin and Healthcare

You might have heard of taking Knox gelatin for arthritis. This was a popular remedy because gelatin contains all the necessary minerals, proteins and more to build up cartilage and therefore help with arthritis.

Today, the Knox Company produces a range of health supplements called Knox NutraJoint. These supplements contain gelatin and other supplements including glucosamine and vitamins.
