If you want to impress everybody on July 4, there are not many jello recipes to rival the impact this one makes! July 4 only comes once a year so it is worth making the effort to do something special in honor of the event.
This jello flag cake is made up with a cake mix and strawberry jello is added to the cake to make it moist and tasty. The topping is a combination of frosting and marzipan in red, white, and blue. This cake might look complicated to make but it is fairly straightforward. If you have never frosted a cake before, you might want to practice a bit before making this frosted jello flag cake.
It does not have to be perfect, of course, but you will want it to be recognizable as a jello flag cake. Frosting cakes is not that difficult and once you have done a few, you will find it pretty easy. A couple of lit sparklers finishes the cake off perfectly and will attract the admiring glances that it so rightly deserves! This cake tastes every bit as good as it looks.
Ingredients -
For the Cake:
1 white cake mix
3 eggs (or as per cake mix directions)
1 cup water (or as per cake mix directions)
1/3 cup butter (or as per cake mix directions)
1 package strawberry or raspberry jello
1 package white marzipan
For the Frosting:
1 ½ cups butter
12 cups confectioners' sugar
2/3 cup plus 4 tablespoons milk
½ teaspoon salt
3 teaspoons vanilla extract
10 drops red food coloring
10 drops blue food coloring
Preparation:
Make up the cake according to the directions on the package and let it cool completely. Poke holes all over the top of the cake through to the base with a chopstick.
Make up the jello as per the instructions on the pack and pour it slowly over the cooled cake. Chill the cake until the jello has completely set.
Put the cake pan in a dish of hot water for a minute and you will be able to tip it out on to a serving platter.
To make the frosting, beat the butter until fluffy and add ¼ of the confectioners' sugar. Beat in the salt, vanilla, and 2/3 cup of the milk.
Gradually beat in the rest of the confectioners' sugar and the rest of the milk if you need it.
Separate the frosting between three bowls.
Add the red food coloring to one, the blue food coloring to another, and leave the last one white.
Put the white and blue icing in two piping bags. Spread the red frosting all over the top of the cake.
Roll out the marzipan to make stripes and put these across the cake.
Wrap any leftover marzipan in plastic wrap and keep it in an airtight container.
Pipe the white frosting all around the outside of the cake and use the blue and white frosting to create the stars on the cake.
Chill in the refrigerator for an hour then decorate with sparklers.

Canned, thawed, and fresh fruit is all fine but if you are using thawed fruit, make sure you drain it well because it can be quite watery and this will dilute the flavor of the jello. Since July 4 is in the middle of summer, there should be plenty of seasonal produce to choose from if you want to use fresh fruit in your jello recipes.
