Ingredients -
3 oz package peach jello
1 cup boiling water
½ cup cold water
1 yellow cake mix
Cooking spray
Small can peach halves, drained and sliced
Cool Whip
Preparation:
Make up the cake mix and bake it as per the directions.
Dissolve the jello in the boiling water. Add the cold water (or the juice from the peaches if you are using peaches in natural juice, not peaches in syrup).
Stir in the peaches when the jello starts to thicken.
Tip the cake out of the baking dish on to a wire rack to cool.
Oil the baking dish lightly with the cooking spray.
Pour the jello into the baking dish and leave it in the refrigerator to set.
Spread a thin layer of Cool Whip on the jello.
Put the cooled cake in the baking dish, on top of the jello, and invert the whole thing, so the jello layer is on top.
Use the rest of the Cool Whip to decorate each serving.
