Strawberry Jello Cake with Mousse Layer

This is a tasty jello cake recipe with a layer of strawberry mousse and a layer of strawberry jello with fruit it. You can use a jello mold to make this jello pudding dessert or use individual cups or bowls if you prefer (and if you have six matching ones!)

The wiggling, jiggling strawberry jello layer on top of the mousse layer contrasts so well, where textures are concerned, and the flavor is really good. You can use fresh strawberries or canned ones. Frozen ones are fine too. Since the strawberries are inside the jello, they do not have the be the firm texture that you get when using fresh strawberries. That means you can make this strawberry jello cake even when strawberries are not in season.

The light rum is an optional ingredient but if you are making this strawberry jello cake recipe for adults, you might want to put some in because it does taste nice. You can use either thawed or fresh strawberries in this recipe. There is not a lot of difference in taste or texture since the jello holds the fruit together well and the dessert is served chilled.

Strawberry Mousse Jello Cake

Ingredients -

1 pack strawberry jello, 8 serving size
1 ½ cups boiling water
1 ½ cups sliced strawberries
1 cup cold water
2 tablespoons light rum (optional)
1 tub cool whip, thawed

Preparation:

Stir the boiling water into the jello mix for 2 minutes or until totally dissolved. Stir in the cold water and the rum if using.

Arrange the strawberries in a 6 cup jello mold and cover with 2 cups of the jello.

Refrigerate for 30 minutes or until the jello is set but not firm.

If the jello sticks to your finger, it is the right consistency.

Chill the remaining jello for 30 minutes then add 2 cups of the whipped topping.

Blend well with a wire whisk then spoon over the jello layer in the mold.

Refrigerate the jello cake for 4 hours or until firm.

Unmold and serve topped with the rest of the whipped topping.
