Rainbow jello has to be one of the coolest looking desserts there is! It is a bit fiddly to make because each layer has to be made separately, but the results are well worth it. Some layers are combined with evaporated milk for a creamy flavor and a slightly darker color. This creaminess also adds another dimension to the overall flavor of this delicious rainbow jello mold dessert.
You can change the flavors if you want but make sure you have seven bright rainbow colors, for the most dazzling looking dessert, and do not have two red jello flavors or two orange jello flavors next to one another.
If you want a conversation piece on your dinner table, this rainbow jello is sure to do the trick. It is also a fun dessert for potluck dinners, kids' parties, and lots more. You have to chill each layer for an hour or an hour and a half so be prepared to spend the day at home making it. This is a great choice to put into a decorative jello mold as it makes a very impressive jello mold with all its colors.
Ingredients -
3 oz cherry jello
3 oz black cherry jello
3 oz orange jello
3 oz strawberry jello
3 oz apricot jello
3 oz lemon jello
3 oz lime jello
1 ½ cups evaporated milk
Preparation:
You need to allow each layer of jello to set for an hour or more before pouring on the next layer.
Mix the black cherry jello with ¾ cup hot water until dissolved, add ¾ cup cold water. Pour into the bottom of a 9 x 13 inch glass dish or your favorite jello mold.
Mix the cherry jello with ½ cup hot water until dissolved, and then add ½ cup cold water and ½ cup evaporated milk. Pour over the set black cherry jello and chill until set.
Mix the lime jello with ¾ cup hot water until dissolved, and then add ¾ cup cold water. Pour over cherry jello and chill until set.
Mix the lemon jello with ½ cup hot water until dissolved, and then add ½ cup cold water and ½ cup evaporated milk. Pour over the lime jello and chill until set.
Mix the orange jello with ¾ cup hot water until dissolved. Add ¾ cup cold water and pour over the lemon jello until set.
Mix the apricot jello with ½ cup hot water until dissolved, and then add ½ cup cold water and ½ cup evaporated milk. Pour over orange and chill until set.
Mix the strawberry jello with ¾ cup hot water until dissolved then add ¾ cup cold water and pour over the apricot jello. Chill until set.

If you want to make rainbow jello or seven layer jello, there are two ways of choosing the colors. You could either choose your favorite colors of jello or you could use the rainbow colors. The easiest way to remember is with a mnemonic like "Richard of York Gave Battle in Vain" or "Read Out Your Good Book in Verse." Alternatively, simply remember the name Roy G Biv. The colors of the rainbow are red, orange, yellow, green, blue, indigo, and violet. There are jello flavors to match all those colors. For violet, use grape jello. Indigo is a bit trickier but if you want all seven rainbow jello colors, try the strawberry-kiwi flavor if you can get it. If not, you can mix some cream with a red jello to make it more pink and less red.
