Ingredients -

1 ½ cups fruity red wine, maybe Merlot
1 tablespoon fresh lemon or lime juice
1 ½ cups cold water
6 oz package raspberry flavored jello
1 cup red seedless grapes, halved lengthwise
3 large seedless oranges
1 cup sliced raspberries or strawberries
Nonstick vegetable spray for the jello mold

Preparation:

Bring the wine to a boil over a high heat in a small pan. Stir the jello into the hot wine in a glass or stainless steel bowl with a rubber spatula until the gelatin dissolves. This should take a couple of minutes.

Stir in the cold water and lemon or limejuice.

Place the bowl in a bigger bowl of iced water and let it stand for about 20 minutes until the jello partially sets.

Grate the sets from an orange and set it aside. Use a serrated knife to cut the oranges into segments. Stir the segments, zest, strawberries or raspberries and grapes into the partially set jello.

Lightly spray a 6-cup jello mold with the vegetable spray and pour the jello into it.

Cover with plastic wrap and chill until set. This will take at least 4 hours.

To unmold the jello, run a knife around the inside edge of the jello mold and tip on to a serving platter. You can dip the outside of the mold into hot water for 5 seconds first to make it easier.
