This delicious cherry almond cream pie contains cherries, jello, vanilla ice cream, almonds and more. This creamy, fruity dessert is easy to make and, if you like creamy jello recipes, you will love it.
Recipes like this cherry almond cream pie recipe are made much simpler by using jello. Jello is a great ingredient for holding a pie filling together and without the jello, the filling in this pie would be very messy and runny. If you are not keen on cherries, you can use strawberries instead and strawberry jello. Cherries are great with almonds though and those two ingredients are paired in many recipes from cherry and almond cakes to cherry and almond Danish pastry recipes.
Cherries are a fruit and therefore nutritious. If you are interested in making healthy pie recipes, substitute sugar free cherry jello for the cherry jello and that cuts out plenty of calories without any difference in the flavor of the finished pie. You can use low fat ice cream too, if you want, and leave out the powdered sugar. However, it is usually better to make the recipe the way it is and just cut your slice slightly smaller!
Ingredients -
3 oz package black cherry jello or cherry jello
9 oz readymade pie crust
16 ½ oz can dark sweet pitted cherries, not drained
1 pint softened vanilla ice cream
⅔ cup sliced almonds, toasted
2 tablespoons powdered sugar
2 cups whipped cream, plus extra for garnish
6 fresh cherries, with stalks
Preparation:
Drain the cherries and reserve the juice.
Blot the cherries on a paper towel, and then add enough water to the cherry juice to get 1 ¼ cups of liquid.
Microwave this liquid for a couple of minutes on "high" in the microwave, then stir in the cherry jello until it dissolves.
Add the vanilla ice cream, stir the mixture well, and then chill it in the refrigerator until it is the consistency of egg white.
This will take about 10 minutes.
Fold in half the whipped cream, half the almonds, and all the cherries.
Pour this mixture into the crust and chill it for about four hours, until firm.
Garnish the pie with the remaining almonds and sprinkle the powdered sugar over the top.
Cut the pie into 6 slices and serve a dollop of cream and a fresh cherry alongside each one.

You might enjoy learning some cherry fun facts as you are eating your cherry almond cream pie. Did you know that cherries come from the same family as plums, peaches, apricots, and almonds? This delicious fruit was first discovered growing in Asia by the Romans around 70 BC. There are various types of cherries but usually only two types are eaten, and these are wild cherries and sour cherries, both of which taste delicious.
Sweet cherries are harder to grow than the other types. All cherry varieties are easily perishable and it is difficult to ripen them after harvest, so as soon as you buy fresh cherries you should put them in the refrigerator. They will stay fresh in there for two or three days only, so plan your cherry almond cream pie recipes as soon as possible!
Cherries can help arthritis sufferers because they provide pain relief from this condition. Eating twenty cherries, a day can fight inflammation. This fruit is also high in melatonin, which can destroy disease-carrying toxins. Cherries are high in antioxidants too, and these fight heart disease and cancer. They are low in fat, sodium and cholesterol but high in vitamin C and fiber, making them healthy as well as yummy.
Tart cherries can reduce back pain and muscle pain, as well as the body's urate levels. This applies whether you eat fresh tart cherries, frozen ones, or even the juice from them. Sweet cherries also contain plenty of anthocyanins, which is the red pigment in the fruit. This helps to decrease inflammation.
Cherries bruise easily so be careful with them. Buy supple ones with a bright color. Firm, plump cherries always taste wonderful, whether you are making a cherry almond cream pie recipe with them or just snacking on them. Choose ones with their green stems still attached to ensure you are getting good quality fruit.
Cherries do not have a long fruiting season. You can see them in their peak in December in Australia and New Zealand or in June in North America and Northern Europe. The cherry tree usually ripens before other trees, which is where the phrase "in cherry condition" (meaning something new) comes from.
