3 eggs plus 1 egg yolk
1 ½ cups water
1 ½ teaspoons grated lemon zest
3 tablespoons lemon juice
½ cup white sugar
¾ teaspoon salt
Whipped cream, to serve
Preparation:
Pulse the flour, ½ teaspoon of the salt and the powdered sugar in a food processor once or twice.
Add the butter and pulse on and off until the mixture looks like fine breadcrumbs.
Add the egg yolk and pulse once more.
Add the water, a bit at a time, until the dough forms a ball against the food processor bowl sides.
Press the dough evenly over the sides and base of a 9 inch spring form pan.
Butter the shiny side of an aluminum foil sheet and press it tightly against the crust, buttered side down.
Chill the crust for 30 minutes in the refrigerator.
Preheat the oven to 350 degrees F and bake the crust for about 30 minutes, then take the aluminum foil off and cool the crust.
Separate the other 3 eggs and mix the yolks with ¼ cup of the white sugar and 1 cup of the water in a pan.
Bring the mixture to a boil, stirring it all the time.
Take the mixture off the heat and stir in the jello until it dissolves.
Add the rest of the water and the lemon zest and juice and chill the mixture until it thickens a bit.
Beat the egg whites with the salt until the mixture is foamy, then add ¼ cup of white sugar, a bit at a time, beating well after each addition.
Keep beating the mixture until it stands in stiff peaks.
Beat the jello mixture a bit, and then pour the meringue mixture into it.
Pour it in to the cooled crust and chill until firm.
Serve with some whipping cream on the side.

This lemon pie recipe is simple to make and the resulting pie is really tasty. You can see from the photo that the pastry crust is also homemade. Readymade pastry sometimes looks "too perfect" whereas homemade crusts look really special. There are different recipes for pie crusts but the recipe used to make the crust for this homemade lemon pie is very simple. A generous dollop of whipped cream finishes this pie off wonderfully. Perhaps you have made lemon pie recipes before but this one is special because it is made with lemon jello for a firm texture and well beaten egg whites for an airy, fluffy texture.
Lemon is one of the most popular ingredients used for making desserts. Its popularity comes from the fact that it has a tart, tangy flavor, making it ideal to contrast with sweeter dessert ingredients like honey, sugar, sweet pastry crusts, or other fruit. A dash of lemon juice is often added to sweet pies, to reduce the cloying sweetness a little and give the dessert a pleasant tangy touch. If you have ever made a homemade lemon pie recipe you will know that making lemon desserts yourself is the best way to get something fresh flavored.
You can make lemon sorbet, ice cream, lemon pie filling, lemon bars, and all kinds of other citrus delights with this tasty ingredient. Sometimes lemon and lime are used together. Lime has a similar bitter flavor but it is slightly less acidic and it can add a stronger citrus taste to your homemade dessert recipes without making them too sharp-flavored.
Wherever possible, use fresh lemons to make a homemade lemon pie recipe or whichever lemon dessert you are preparing. You can buy preserved lemons, lemon juice in a plastic squeezable container and lemon extract but, as with most produce, nothing beats the flavor of the fresh fruit. Even if the recipe only calls for a tiny amount, and that is likely if you are using something as strong-flavored as lemon, you should still use fresh lemon juice, flesh or peel whenever you can.
If you are making a lemon cheesecake recipe or a homemade lemon pie, save some of the lemon slices to use as a garnish. Fresh lemon peel is also nice to grate over the top of your finished dessert but rinse the lemon well, to remove the waxy coating that it might have on it. Sometimes lemons are coated in wax to make them look glossy and appealing but this is not something that you necessarily want to add to your lemon pie filling!
Lemon is associated with the spring and summer months, because it is used to make fresh lemonade, delicate dressings for seafood like shrimp and crab and other refreshing, fragrant dishes. Savory lemon recipes like soups, risottos, or lemon chicken are nice and light in the warmer months. You can also use it in the cooler months though, because this ingredient can add a tasty tang to your winter stews and you can also make colorful lemon pie recipes to instantly brighten any chilly winter day.
