You can use any fruit you like. If you prefer to use sliced peaches rather than kiwis, go for it. Raspberries, strawberries, blackberries, plums and mango all go well and you can either stick with one type of fruit or use a selection, to add color and to vary the flavor a bit. Bananas would taste good too but you need to slice them just before decorating the pie, else soak them in lemon juice, so they do not go brown.
Ingredients -
1 ½ cups finely crushed vanilla wafers
⅓ cup melted butter
1 package lemon jello
2 cups ice cubes
¾ cup boiling water
1 ½ cups whipped cream
3 kiwis
Preparation:
Peel and slice 2 of the kiwis and finely chop the other one.
Combine the melted butter and vanilla wafer crumbs and press the mixture firmly over the base and up the sides of an 8 inch pie plate.
Dissolve the lemon jello in the boiling water until it is totally dissolved, then stir in the ice.
Keep stirring until the jello is thick, and then remove any ice, which did not melt.
Add the whipped cream to the jello, and then stir in the finely chopped kiwi.
Refrigerate the jello mixture until it is very thick, and then spoon it into the pie crust.
Arrange the kiwi slices over the top, making sure they overlap, and chill the kiwi pie for 3 hours or until the jello layer is very firm.

Kiwis have been used for more than seven hundred years in their native China and it might surprise you to learn that there are more than four hundred kiwi varieties. This tasty green fruit used to be known as Yangtao, their Chinese name, until 1906 when they were known as Chinese gooseberries. When kiwis were first imported into the United States in the 1960s, the name kiwi fruit was applied. The French call them "souris vegetables" which means vegetable mice.
Kiwis are bright green with small black seeds. They have a fuzzy brown skin. Kiwi vines can grow up to fifteen feet high, which ensures the fruit gets plenty of light. The flavor of a kiwi is hard to describe but if you imagine melon, peaches and strawberries combined, that might give you an idea. Kiwis are juicy and soft. They are rich in potassium, vitamins C and E, fiber and antioxidants and they are also free of cholesterol, fat, and sodium.
Kiwis can be used in all kinds of recipes from kiwi pie to savory recipes. You can use kiwi as a meat tenderizer because it contains Actinidin, which is an enzyme. If you want to try this, you can rub a kiwi over your meat or mash it with a fork then apply the mashed pulp to the meat. Leave it on for fifteen or twenty minutes and the Actinidin will tenderize the meat. This enzyme can also break down dairy product proteins so if you are combining it with cream or ice cream to make a kiwi pie recipe, you should serve it immediately for the best results.
Kiwi pie is very popular and the unmistakable bright green color of the kiwi contrasts nicely with other soft fruit like bananas or peaches or with bright red or blue berries. Kiwi is easy to peel and slice. One of the easiest ways to eat this fruit by itself is to slice the kiwi in half across the center and eat it with a spoon, like you would eat an egg. It is easy to cut into slices too and you can use these to decorate a jello pie recipe, a jello pudding recipe, or another of your favorite dessert recipes.
Kiwi is a nice addition to a fresh fruit salad recipe and the flavor of this fruit goes well with all kinds of other fruit flavors. Kiwi is not only a healthy fruit but a really flavorful one as well and it is especially good for making desserts like kiwi pie.
