Ingredients -
1¼ cups all purpose flour
¼ teaspoon salt
1 tablespoon sugar
½ cup butter
2 tablespoons ice water
1 package strawberry jello
1 ½ cups boiling water
1 cup ice cubes
2 cups fresh strawberries, halved
Preparation:
First, make the pastry shell. Combine the sugar, salt, and flour.
Cut the butter into cubes and rub it into the flour mixture using your fingers.
When the butter pieces are the size of small peas, freeze the pastry mixture for 5 minutes.
Add half the ice water to the flour mixture, and then mix it with your fingers.
Add the rest of the ice water and mix it again with your fingers.
Form a ball. If it is very flaky, add a little water and mix again.
Roll the pastry out on to a floured board and put it in a 9 inch tart pan.
Freeze it for 20 minutes.
Preheat the oven to 425 degrees F and cover the pastry with aluminum foil.
Poke a few holes in it with a fork.
Bake for 8 minutes then take the aluminum foil out and bake for 8 minutes more or until the pastry is crispy and golden brown.
Let it cool.
Dissolve the jello powder in the boiling water, stirring until all the jello crystals dissolve.
Add the ice and stir until it melts.
Chill the jello until it is thick - this should take about 30 minutes.
Stir in the halved strawberries and pour the mixture into the cooled pie crust.
Chill for 3 hours or until firm.

They are indigenous to Asia, Europe, and the Americas and are the only fruit, which has seeds outside instead of inside. These delicious berries grow all through the year but their prime time is between April and June. Strawberries need to be ripe when you pick them because they will not ripen afterwards. These tasty berries are rich in folate and vitamin C and also contain iron and potassium.
Perhaps you have heard of Saint Hildegard, who was a German nun in the 1100s. She believed that toads and snakes contaminated strawberries because they grew near the ground and a lot of people listened to her and believed her prophetic visions, including this one. However, there were more than five billion pounds of strawberries produced in the 1990s, with the United States being the biggest strawberry producer, so Saint Hildegard's vision was short-lived.
There are various types of strawberries but the most common American strawberry is actually the result of cross breeding a Chilean strawberry variety with the wild Virginia strawberry. In the 1700s a Frenchman who was spying on Chilean Spanish, forts brought some local strawberries home and that is when the American strawberry was born. This variety is tasty and hardy enough to withstand the necessary production and transportation techniques.
Strawberries are delicious as they are or served with ice cream or whipped cream. What about making homemade whipped cream to serve with them? To do this, you should chill some heavy cream for a few hours. Also, chill a large stainless steel bowl. Pour the cream into the stainless steel bowl and whisk it. When it is like soft peaks, add a couple of drops of vanilla extract and some white sugar. Keep whisking the cream, tasting it and adding more sugar or vanilla if it needs it, until it is firm. Do not whip it too much, else it will go lumpy and grainy. Serve this home-whipped cream with fresh strawberries for a classic and elegant dessert.
