Ingredients -
2 packages orange jello
2 cups ice
2 cups boiling water
2 cups whipping cream
¼ cup sugar
1 small can mandarin orange segments
Orange rind strips, for garnish
For the Granola Bars:
8 ¾ oz golden sugar
8 ¾ oz unsalted butter, chopped into pieces
2 oz pecans, chopped
6 oz maple syrup
15 oz whole oats
Finely grated zest of 1 orange
Cooking spray
Preparation:
Preheat the oven to 350 degrees F.
Beat the whipping cream on a high speed until it begins to thicken. Slowly add the sugar and keep beating until the cream forms stiff peaks. Keep it in the refrigerator until you need it.
Combine the boiling water with the jello, stirring until the jello dissolves. Add the ice, stirring it around the bowl for 5 minutes, until the jello is thick. Remove any ice that has not melted.
Drain the mandarin segments and add them to the jello.
Refrigerate the jello for an hour while you make the granola bar.
Spray cooking spray all over a 13 x 9 inch shallow baking tin.
Melt the sugar, butter, and maple syrup in a saucepan over a medium heat, stirring constantly.
Take it off the heat and stir in the oats, orange zest, and pecans. The mixture should be soft. Transfer the mixture into the baking tin and level it off.
Cook for about half an hour, or until the edges are golden brown but the middle part is still quite soft.
Take the granola bar out of the oven and cut them into 12 pieces, leaving them in the tin to cool.
Remove the granola bar from the tin when they are cool.
Put a few spoonfuls of jello at the bottom of 8 parfait glasses, and then add a couple of spoonfuls of whipped cream.
Repeat this layering process until the glasses are full, and then decorate each one with a granola bar.
Finish off with a layer of whipped cream and some orange rind.
