Cranberry Salad

This cranberry jello salad recipe is simple to make and combines the flavors of pineapple, black cherry, cranberry, and pecans for a fruity, nutty dessert. Sugar is added to give extra sweetness.

For this cranberry and jello salad, the jello is made with pineapple juice and the cranberries, pineapple, and nuts are broken or crushed and added to the jello mixture before it sets completely. This is one of the easiest jello mold recipes to make and you can vary the jello flavor if you like, perhaps using strawberry jello or orange jello, both of which would contrast nicely with the cranberries and nuts.

Ingredients -
 
1 (4 ounces) can Crushed Pineapple
1 (3 ounces) package Black Cherry Jello
6 ounces Raw Cranberries, rinsed
1 cup broken Pecans
1/2 cup Sugar
 
Preparation:
 

Drain pineapple and reserve juice. Add juice to 1/2 cup hot water and heat to boiling. Soften jello in 1/4 cup cold water. Dissolve softened jello in hot water-juice mixture. Let cool until it starts to set, (don't let the jello harden). Put cranberries through a grinder. Add ground berries, pineapple, nuts and sugar to cooled jello mixture. Mix well. Pour into bowl or mold. Refrigerate until completely set.
