Cranberry Jello Salad with Pecans

This cranberry jello salad recipe is simple to make and combines the flavors of pineapple, black cherry, cranberry, and pecans for a fruity, nutty dessert. Sugar is added to give extra sweetness. If you cannot find black cherry jello, use cherry jello, strawberry jello or raspberry jello in its place.

For this cranberry and jello salad, the jello is made with pineapple juice and the cranberries, pineapple, and nuts are broken or crushed and added to the jello mixture before it sets completely. This is one of the easiest jello mold recipes to make and you can vary the jello flavor if you like, perhaps using strawberry jello or orange jello, both of which would contrast nicely with the cranberries and nuts.

Cranberries are actually very healthy and great if you are prone to bladder problems. Pineapple is nutritious too. Who would have thought that a jello dessert tasting so great could be good for you too?

Easy Pineapple and Cranberry Salad

Ingredients -

3 oz pack black cherry jello
1 cup pecans, broken or roughly chopped
4 oz can crushed pineapple
½ cup sugar
½ cup hot water
¼ cup cold water
6 oz rinsed cranberries

Preparation:

Drain the pineapple and keep the juice.

Combine the hot water with the reserved juice and bring it to a boil. Soften the jello in the cold water, and then dissolve it in the hot water mixture.

Let it cool until it is thick but not set.

Run the cranberries through a grinder, and then add them with the nuts, sugar, and pineapple to the jello mixture, stirring well.

Pour everything in to a mold and chill until it has set.
