Decorative Clear Jello with Fruit

This is one of the more unusual jello recipes because we are going to use clear jello rather than colored and flavored, fruity jello. This means you can see the fruit slices inside the jello better and it is an interesting looking dessert.

You can vary the fruits you use but because the fruit slices are on display in this jello recipe, you should cut the slices uniformly and only use perfect fruits. This dessert is a centerpiece as well as something to eat, so you should try to make it look as good as possible. Lemon slices are not something you would use in most jello recipes but, because you are using colorless gelatin here, people will be able to pick out the lemon pieces. They are more for decoration than flavor anyway. Use orange slices if you prefer though, or even grapefruit pieces.

When you make this decorative clear jello with fruit recipe, make sure you stick to the suggested refrigeration times, else all your fruit pieces will sink to the bottom, which is not the effect you are looking for! Jello Fruit Salad in Clear Gelatin

Ingredients -

2 ½ cups white grape juice
½ cup cold water
2 tablespoons unflavored gelatin
1 ½ cups lemon slices
1 ½ cups kiwi slices
1 ½ cups strawberries, halved
1 cup mango, cut into chunks

Preparation:

Sprinkle the gelatin over the cold water and, without touching it, let it soften for 5 to 10 minutes. Heat a cup of the grape juice in a small pan until very hot and stir the softened gelatin into it. Stir this mixture over a low heat until the gelatin dissolves. Remove from the heat and stir in the rest of the grape juice.

Pour a thin layer of jello into the bottom of a clear jello mold and refrigerate for 30 minutes. Arrange some of the fruit in this layer. Refrigerate for another hour. Add another layer of fruit and refrigerate. Add the last layer of fruit and jello and chill overnight.

If you want to remove the jello from the jello mold and invert it on to a serving plate, you can place it in hot water or use a hairdryer to loosen the sides. If you are not serving it right away, keep it chilled.
