This is a very easy lime jello salad recipe to make and the delicious ingredients of nuts, cream cheese, pineapple, and cream go really well with the lime jello flavor. In this recipe, the lime jello salad is served in individual martini glasses to make a nice looking dessert but you can create this dessert in a jello mold if you prefer, or if you do not have martini glasses.
Feel free to leave out the pineapple or pecans if you like. They are mainly for texture, rather than flavor, although the sweet pineapple does contrast nicely with the tangy lime, and the pecans add a flavorful crunch to this lime jello salad recipe. You will need to leave the cream cheese out of the refrigerator for an hour or so, until it reaches room temperature, else it will be difficult to combine it with the other ingredients because it is too stiff to whisk properly.
Lime jello looks good because of its sharp color and if you like you can garnish the individual jello desserts with chocolate sprinkles or a little bit more whipped cream. Alternatively, these jello desserts also look impressive served just as they are.
Ingredients -
Small pack lime jello
½ cup sugar
1 cup hot water
8 oz cream cheese, softened
1 cup chopped pecans
Small can crushed pineapple, drained
1 pint whipping cream, whipped
Preparation:
Combine the jello, sugar, and water and chill until partially set.
Add the cream, pineapple, pecans, and cream cheese to the cooled jello mixture, blending slowly with an electric mixer until everything is mixed together.
Divide the mixture between martini glasses.
Refrigerate until firm.
