This is a delicious jello salad recipe with orange, carrot, pineapple, and nuts. It is great served as a side dish or alongside a meat recipe or salad recipe. Alternatively, you can serve this jello salad as a centerpiece at a party or potluck dinner.
Savory jello salad recipes like this carrot and pineapple jello salad have been popular since the 1930s, going in and out of vogue ever since. You can use any combination of fruit and vegetables in a jello salad, and walnuts are especially tasty. Carrot goes nicely with the sweeter ingredients and carrot can be used to make savory recipes or sweet ones. Carrot and orange soup is both sweet and savory and carrot cake is sweet, just to demonstrate how versatile carrots are.
Jello salad recipes often contain mayonnaise, cream, or yogurt, and the mayonnaise in this jello salad recipe is optional but it does make the recipe nice and creamy. You could use strained cottage cheese instead of the mayonnaise if you prefer. If you like, you can prepare the two packs of jello separately and make one plain layer and the second layer with ingredients, if you want to make a layered jello recipe.
Ingredients -
2 packs orange or lemon jello
Can of crushed pineapple, drained but juice reserved
1 ½ cups grated carrot
½ cup mayonnaise
¼ cup finely chopped walnuts
Preparation:
Prepare the jello, following the instructions on the pack but using some of the pineapple juice from the canned pineapple instead of water, then pour it into a glass baking dish.
Mix in the mayonnaise when the jello is partially set and add the carrot and pineapple too.
Stir well and leave to set.
Dip glass dish in warm water to unmold the jello and tip it on to a chilled serving plate.
